Mexi-Guacamole Sirloin Steaks

Ingredients:

4 10 ounce sirloin steaks
2 sliced jalapeno peppers
2 large diced tomatos
2 diced onions
1/4 head shredded lettuce
8 flour tortillas
2 avocado
1 1/2 cups plain yogurt
1 teaspoon cumin
2 fresh diced garlic
1 dried crushed red pepper
2 tablespoon olive oil
1 teaspoon tabasco sauce


Directions:

Place 1 diced tomatoe, 1 diced onion, 1 fresh diced garlic clove and the jalapeno peppers into a pan with a tablespoon of olive oil and saute. Place the peeled and deseeded avocados, yogurt, olive oil, tabasco sauce and cumin into a food processor and blend together until smooth. Put this mixture into a mixing bowl and fold the other diced tomatoe, onion, garlic and crushed red pepper into it. Grill the sirloin steaks to your preference and top each with a dollop of the sauteed mixture. Spoon 1/4 of the blended avocado mixture onto the plate with the steak next to a bunch of shredded lettuce and add 2 quarter folded flour tortillas to the plate.

Espana Marinade

Ingredients:

1/4 cup extra virgin olive oil
2 garlic cloves, minced
1 teaspoon Tabasco sauce
1 tablespoon balsamic vinegar or white vinegar
1 teaspoon yellow mustard
1 tablespoon Worcestershire sauce
salt and pepper to taste


Directions:

Mix all ingredients together and place steaks in freezer bag with marinade and let rest preferably overnight. The recipe calls for balsamic vinegar, but if that is not on your shelf just use white vinegar although balsamic is definitely better.

Coq Banni Beef Marinade

Ingredients:

2 tablespoons chopped fresh garlic
2 tablespoons Worcestershire sauce
2 tablespoons balsamic vinegar
3 teaspoons Dijon mustard
1 tablespoon soy sauce
1/3 cup extra virgin olive oil
1/2 teaspoon fresh ground black pepper


Directions:

Mix all the ingredients together in a bowl and pour over steaks. Cover the meat tightly and place in the refrigerator for minimum 4 hours but best if left for 24 hours. Take the steaks out of the refrigerator and bring them down to close to room temperature before grilling. Grill for 6 to 12 minutes while turning 3 to 4 times or until steaks reach desired doneness.

Bacon Jalapeno Sirloins

Ingredients:

4 8 ounce Baseball Sirloins
4 jalapeno bacon strips
4 teaspoons Santa Fe blend spice
2 medium red onion, sliced
6 small mixed bell peppers, sliced
4 ounces chipotle sandwich sauce
4 ounces exotic grains
blended in oil as needed


Directions:

Wrap sirloin with bacon and tie with butcher's twine. Season with Santa Fe blend. Rub the peppers and onions with salt, pepper and blended oil. Grill until tender. Chill and slice. Pan sear on medium high heat the sirloin about 3 min on each side and finish in a 350 degree oven until desired doneness. In separate sautee pans, warm the pepper-onion mix and the exotic grains. Place the steak over plated vegetables and grains. Drizzle with chipotle sauce.

Mexican Lime Fajita Marinade

Ingredients:

2 small dried chiles
2 teaspoons lime zest
4 tablespoons chopped red onion
3 finely diced garlic cloves
1 teaspoon cumin
1/4 teaspoon ground coriander
1 teaspoon sea or regular salt
1/4 cup extra virgin olive oil


Directions:

Place all the ingredients in a blender or food processor and blend until smooth. Hold back about 1 or 2 tablespoons of marinade for the vegetables and use the remainder for the steak, but place the steak and vegetables in separate ziploc bags. Add the amount of marinade to each bag as suggested, then seal and tumble until evenly coated. An hour of marinate time is sufficient for the vegetables, but leave on longer for the steak, if possible. Remove meat from marinade, lightly wipe away the excess and grill on high heat until almost done. Allow to rest for about 5-10 minutes before serving. Place grilled meat and vegetables on warmed flour tortillas and top with grated cheese and homemade salsa.

Texas Route 66 Chili

Ingredients:

1 lb cubed sirloin steak
6 slices bacon
1 lb ground pork
2 medium chopped onions
1 chopped bell pepper
2 chopped celery stalks
4 diced garlic cloves
1/2 cup diced green chilies
1 small diced jalapeno pepper
2 16 ounce cans of kidney beans
1 small can of corn
1 16 ounce bottle or can of dark beer
1 large can of chopped tomatoes
3 tablespoons chili powder
1 tablespoon finely ground coffee
1 tablespoon paprika
1 tablespoon ground cumin
1 tablespoon brown sugar
1/2 teaspoon salt
1/2 teaspoon ground coriander
1/2 teaspoon dry mustard
1/4 teaspoon cayenne
1/2 teaspoon fresh ground black pepper


Directions:

Mix the spices, sugar and coffee for the San Antonio Chili seasoning and roll the cubed steak in the seasoning mix until the meat is thoroughly coated. Brown the bacon until crisp in a large, heavy fry pan over medium high heat - drain on paper towels and reserve the bacon drippings. Next brown the coated cubes of steak in the bacon drippings. Put the browned steak in a crock pot turned on to high and add the ground pork to the frying pan and cook it down, stirring continually for about 5 minutes. Transfer the pork to the crock pot and add the tomatoes, onions, celery and garlic along with the beer to the fry pan and stir them frequently for about 5 minutes. Next add the pork, tomatoes, onions, celery and garlic as well as the bacon to the crock pot. Put in the pepper, chilis beans and corn into the crock pot. If there is not enough liquid to cover everything then add some more beer. Let the mixture come to a simmer with the lid on and let it simmer at least another hour.

Tequila Fajitas

Ingredients:

32 oz. sirlon steak
3 diced garlic cloves
1/3 cup extra virgin olive oil
2 tablespoons vegetable oil
6 tablespoons tequila
1 teaspoon salt
4 tablespoons fresh lime juice
1 large sliced onion
3 bell peppers of assorted color cut into strips
1 teaspoon ground cumin
1 cup grated cheddar cheese


Directions:

Cut the steak into pieces that will fit onto the grill and place the pieces of meat into a stainless steel or glass bowl. Mix the garlic, lime juice, cumin, tequila, salt, and 1/3 cup of olive oil. Pour over the meat and marinade for 2 hours. Remove the meat from the marinade and grill over hot coals, but do not allow meat to dry by overcooking. Heat the remaining 2 tablespoons of vegetable oil and sautee the peppers and onions over a medium high heat until they are crispy and tender. Cut the grilled meat into strips and serve with the pepper and onion mixture with warm flour or corn tortillas. The fajitas should also be served with plain yogurt, guacamole, salsa and cheeses.

Whiskey River Soft Shell Tacos

Ingredients:

32 oz. sirlion steak
4 diced garlic cloves
1/4 cup extra virgin olive oil
2 tablespoons butter
6 tablespoons whiskey
1 teaspoon ground cumin
1 teaspoon salt
1/2 teaspoon white pepper
4 teaspoons lemon zest
1 large sliced onion
3 bell peppers - green/red/yellow
1 cup grated cheese


Directions:

Cut the sirloin steak into strips and place the pieces of meat into a mixing bowl. Add the garlic, lemon zest, cumin, whiskey, salt, pepper and the 1/3 cup of olive oil and marinade for 4 hours. Remove the meat from the marinade and grill over hot coals, making sure that you do not allow the meat to dry out from overcooking. Heat the 2 tablespoons of butter and sautee the peppers and onions over a medium high heat until they are tender yet still crispy. Put the grilled meat strips into warm flour tortillas and serve with the pepper and onion mixture. The fajitas should also be served with sour cream, salsa and grated cheese.
